I haven't had the opportunity to try this recipe from Silk out for myself yet, but if the reviews are an indicator, it's a good one!BERRY STREUSEL MUFFINS
Streusel Ingredients
- 1/4 cup flour
- 1/4 cup brown sugar
- 1/4 cup old-fashioned rolled oats
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 3 Tbsp margarine or butter
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/3 cup brown sugar
- 2 eggs
- 2 containers Silk Blueberry or Strawberry Soy Fruity & Creamy
- 1/4 cup applesauce
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup fresh or frozen blueberries or chopped strawberries
Directions
1. Preheat oven to 375ºF. Grease or line a 12-cup muffin tin with paper muffin cups.2. Place all streusel ingredients in a small bowl. Using fingertips or a fork, mix until combined and crumbly. Set aside.
3. In a medium bowl, whisk together flour, baking powder, baking soda and salt. Set aside.
4. In a separate bowl, beat sugar and eggs. Beat in yogurt, applesauce, oil and vanilla.
5. Fold flour mixture into yogurt/egg mixture until just combined. Add berries, being careful not to ovemix.
6. Spoon into prepared muffin tin, filling cups 3/4 of the way full. Evenly divide streusel topping between muffins.
7. Bake for 20 minutes or until tops spring back.
