Chicken salad with grapes and apples recipe

Chicken salad is a great way to use up leftover chicken, but it tends to get boring making it the same way every time. This flavorful recipe features grapes and apples for added texture and flavor. You can thank us later.

CHICKEN SALAD w/GRAPES & APPLES
Ingredients
  • 2 small boneless, skinless chicken breasts, you can also use rotisserie chicken or leftover chicken if you're in a hurry
  • 1 stalk of celery, diced
  • ¼ small onion, diced
  • 3 mini carrots, diced
  • ¼-½ cup mayonnaise 
  • 1 teaspoon mustard
  • salt and pepper to taste
  • One handful of grapes, quartered
  • ½-1 Small Gala or Fuji apple, chopped into small pieces
Directions
Cook the chicken. You can either boil the chicken or you can oven-bake it depending on how quick you want to eat. Let the chicken cool. Once cooled, take two forks and shred the chicken. Salt and pepper the chicken. You can also add in any other spices you’d like-some good ones are paprika, crushed red pepper, Cajun, lemon pepper-stir until seasoning is through out. Now you can add the veggies. You can even add any other veggies you’d like-some good ones are snow pea pods, red and yellow peppers, green onion, jicama-stir until veggies are through out. (Get creative with spices and veggies or enjoy the normal way) Now comes the yummy goodness.The Grapes and Apple. Add those to the chicken mix. Last but not least, you add in the mayonnaise and mustard to the chicken, and stir until everything is blended together. Serve chilled. You can serve on any kind of cracker, any kind of bread, or even a salad. 

*All the Fruits and Veggies should be chopped to around the same size
