Ingredients
Ice
3/4 cup shelled sweet peas
1 tablespoon shelled sunflower seeds
1 medium jalapeƱo
1 1/2 teaspoons kosher salt, divided
2 ripe avocados--halved, pitted and peeled
3 scallions, white parts only, thinly sliced crosswise
2 tablespoons finely grated lime zest, plus the fresh juice from 2 limes
Directions
Fill a large bowl with ice and water. Bring a medium size pan of water to a boil and add the peas. Cook until tender, 1 to 2 minutes. Strain peas into a fine-mesh sieve and into the ice water to stop the cooking. When the peas are cool, transfer to a paper-towel lined plate to drain. In a skillet on medium high heat, toast the sunflower seeds until they are fragrant and golden brown, about 1 minute. Remove seeds and add jalapeno. Cook until the skin is charred and blistered. Remove stem and peel away the char. Cut jalapeno in half lengthwise and remove the seeds. Place peas, jalapeno and 1 teaspoon salt in a food processor and pulse until coarsely chopped. In a medium bowl, combine the peas mixture, avocado, scallions, zest and juice and mash together until well blended. Add remaining salt to taste. Transfer to a serving bowl and top with sunflower seeds. Serve with tortilla chips.
