One recent Monday, it was my manager's birthday and the staff celebrated a carry-in. No one had stepped up to make a dessert, so I figured I’d try the pumpkin pie spice blend sample I got from Trade East and make a really simple glazed pumpkin cake in his honor. Needless to say, it was a HUGE hit at work!! Everyone loved it and I walked away with a new recipe to share with you all. There was maybe four pieces left by the end of the day. Ingredients
- 1 box cake mix, I used Butter Golden from Kroger
- 1 15 oz can of 100% Pumpkin
- 1 teaspoon pumpkin pie spice
Glaze:
- 1 cup confectioner's sugar
- 2 tablespoons apple juice, water or milk
- ½ teaspoon pumpkin pie spice
Directions
Mix cake mix, pumpkin and pumpkin pie spice until well blended. Bake according to package directions (350 degrees). While the cake is baking, make the glaze by whisking together all ingredients until a pourable drizzle forms. Add more powdered sugar if its too thin, more apple juice if its too thick. When ready to serve, cut cake and drizzle with glaze.
Cook's Notes
I added a little water at a time to the cake and pumpkin mix until all the cake mix was mixed but the batter was still a little thick.
I made a batch and half of the glaze and instead of drizzling it over the cake when it was cooked, I drizzled the glaze over the cake while it was still warm and then I Spread it out lightly over the cake until it was completely covered. Whatever your preference is, go for it!
