Split pea soup is not something most of us would consider fall food fare, but the heartiness of this recipe certainly fits the bill!
SPLIT PEA SOUP
Ingredients
- 6 slices bacon, cooked crisp, drained and crumbled, save grease
- 1 small white or yellow onion, chopped
- 1 large carrot, chopped
- 2 cloves garlic, minced
- 4 cans vegetable or chicken broth
- 1 1/2 cups green split peas
- 2 bay leaves
- 1-2 teaspoons chopped fresh rosemary, depending on your taste
- salt and pepper to taste
Add all of the ingredients except the salt and pepper, including the reserved bacon grease, to your crock pot and cook on low 6-8 hours. When ready to serve, remove bay leaves and puree the soup, if desired, before serving.
