If you're like most people, the thought of making Thanksgiving dinner for your entire family can be a daunting one. It can be tricky to get the timing right to get your entire menu on the table at the same time. These make-ahead mashed potatoes will help ease your stress a bit. They can be made 2 days ahead of time to make life a bit easier this holiday season.MAKE-AHEAD MASHED POTATOES
Ingredients
- 4 pounds Yukon Gold potatoes, scrubbed clean
- Kosher salt
- ⅔ cup heavy cream
- ⅔ cup whole milk
- 2½ sticks butter, cut into pieces
- ½ cup sour cream
- salt and freshly ground black pepper, to taste
Directions
Place potatoes in a large pot and add cold water to completely cover them plus 1 additional inch. Add a handful of salt and bring to a boil. Reduce heat and allow the potatoes to simmer until very tender, 30-40 minutes. Remove from heat and drain, allow potatoes to dry. While potatoes are drying, stir together 2/3 cup cream and 2/3 cup milk and bring to a simmer. Turn heat to low to keep warm until time to use. Pass the potatoes and butter through a ricer into a bowl. Season with salt as desired. Mix with a potato masher until the butter is melted and combined with the potatoes. Stirring continually, slowly add the warm cream mixture followed by the sour cream. Season to taste.
If you are making these in advance, allow to cool completely before storing in an air-tight container. to reheat, place the potatoes in a pot and stir in 1/3 cup heavy cream and 1/3 cup whole milk. Heat over medium low heat and stir frequently to prevent burning.
