Chewy molasses cookies recipe

Molasses cookies are one of those old fashioned recipes that many in the younger generations seem to overlook in favor of more trendy or less "dated" ones. We promise, one taste of these cookies and they will start singing a different tune!

CHEWY MOLASSES COOKIES
Ingredients
  • 3 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup molasses-do not use blackstrap molasses or your cookies will turn out bitter and burnt tasting
  • 1/3 cup dark brown sugar, packed
  • 1/2 stick butter, melted
  • 1/4 cup buttermilk
  • 1 eggs, beaten
Directions
Preheat oven to 350 degrees F, line baking sheets with parchment paper. In a medium size bowl, whisk together the first 5 ingredients. In a large bowl, whisk together molasses, dark brown sugar and melted butter. Once combined, whisk in buttermilk then eggs and whisk until smooth. Add dry ingredients and fold into wet ingredients until well combined. Using a 1 1/2 inch scoop, scoop dough onto parchment lined sheets 9 per sheet, evenly spaced apart. Bake for 12-15 minutes. Cookies will be domed and a toothpick inserted into the center will come out clean. Cool for 5 minutes on pans then transfer to wire racks to cool completely.
