Gluten-free peanut butter cookie recipe

Living a gluten-free lifestyle can be tricky during the holiday season when well meaning family
members and friends are constantly sharing traditionally baked holiday goods made with flour. Thankfully, you can make your own gluten-free treats for yourself and to share with others. These peanut butter cookies are so good, you'll be baking them over and over. Plus they are easy enough for kids to make with minimal supervision.

GLUTEN-FREE PEANUT BUTTER COOKIES
Ingredients
  • 1 cup peanut butter 
  • 1 cup sugar 
  • 1 large egg 
  • 1 teaspoon vanilla extract
Directions
Preheat oven to 325 degrees F. In a medium size bowl, stir together all ingredients until well combined. Roll into 1 inch balls. Place 1 inch apart on a baking sheet and flatted slightly with the tines of a fork. Bake 12-15 minutes, until the cookies are golden brown. Allow to cool for a couple of minutes before transferring to wire racks to cool completely.
