CARROT GINGER SOUP
Ingredients
In a stockpot, melt butter over medium high heat. Add onions and cook until soft. Add broth, carrots and ginger. Cover and bring to a boil. Reduce heat and simmer until carrots are tender.Allow to cool slightly, then fill a blender half full and pulse until pureed. Repeat the process until all of the carrot mixture has been pureed. Return to stockpot and add cream and stir until heated through. Season with salt and pepper. Ladle into bowls and garnish with a dollop of sour cream.

- 6 cups chicken broth
- 2 pounds carrots, peeled and sliced
- 2 tablespoons grated fresh ginger
- 1 cup whipping cream
- Salt and white pepper
- Sour cream
