If you find yourself with an abundance of corn, this recipe is a great way to use some of it up! Make a double batch and freeze some for those days when time is short or you don't want to be bothered with cooking.

CORN CHOWDER
Ingredients
Directions
In a stockpot, melt butter and sauté onion until golden. Add potatoes and water. Bring to a boil, reduce heat and simmer, covered, until potatoes are tender. Gradually whisk flour into milk and pour into the stockpot. Add remaining ingredients and bring to a boil. Reduce heat, simmer for 10 minutes, stirring occasionally. Serve hot.

- 2 tablespoons butter
- 2 cups potatoes, diced
- 1 cup hot water
- 2 tablespoons all-purpose flour
- 2 cups milk
- 10 ounces corn, fresh, frozen or canned
- 1 teaspoon salt
- 1/8 teaspoon black pepper
