Since January is National Egg Month, it is an obvious choice to enjoy the many health benefits of eggs by adding them to your diet. This easy fritatta recipe is a great place to start!
EASY BAKED FRITTATA
Ingredients
Preheat oven to 375 degrees F. In a large bowl, whisk together eggs, cream and mozzarella cheese. Season with salt, pepper and pepper flakes as desired. Heat oil in a large skillet over medium heat. Cook shallot and garlic and cook until soft. Add mushrooms and cook until soft then add spinach and cook until wilted. Pour eggs into skillet then add dollops of ricotta cheese. Bake in preheated oven until cooked through, about 12 minutes. Carefully remove from oven and serve immediately.
