Pear and brie soup recipe

PEAR AND BRIE SOUP
Ingredients

  • 4 small pears, peeled, cored and cut into cubes 
  • 1/2 teaspoon fresh grated ginger 
  • 3 cups chicken stock 
  • 1 tablespoon butter 
  • 1/2 cup evaporated milk 
  • 1/2 cup cooking cream 
  •  5 oz Brie, cut into cubes 
  • 1 pinch nutmeg 
  • salt, pepper to taste 

Directions
In a medium size pot, bring the stock to a boil. Stir in the pears, ginger and nutmeg and simmer for 10-15 minutes until pears are cooked. Puree the mixture with an immersion blender then add milk and cream. Simmer for 5 more minutes then remove from heat and stir in the butter and Brie cubes. Serve warm.
