Scotch eggs recipe

Some people like serving this at Christmas time, but they are great to make at Easter, too. They are a great way to use up your leftover Easter eggs.

SCOTCH EGGS
  • 1 quart oil for frying 
  • 4 hard-boiled eggs, peeled
  • 1 pound pork sausage 
  • 4 cups panko, seasoned with salt and pepper
  • 1/2 cup flour 
  • 4 eggs, beaten
Directions
Preheat oven to 350 degrees F and the oil to 375 degrees F. Shape the sausage into four patties, flattening it enough to completely cover each egg. Lightly coat each egg with flour then coat with the beaten egg mixture. Roll in bread crumbs to coat thoroughly and evenly. Deep fry until golden then place in a baking dish. When all eggs are fried, bake in the oven for 8-10 minutes.

Cook's Notes-for a lighter variation, you can bake this in the oven for 35-45 minutes and skip the deep frying process.
