Quarantine Chopped: Long bean stir fry with orange chile sauce


Last Friday, my roommates and I took a field trip to what has been dubbed by our household "The Disney World of Grocery Stores" AKA Jungle Jim's. After spending nearly three hours grocery shopping, we left with enough food to feed a small army. Always one for a food adventure, I grabbed some fresh produce from the clearance shelves with hopes of expanding my horizons. Last night at for dinner, that's exactly what I did! After looking through the ingredients I already had on hand, a plan of attack soon formed. My four random ingredients were:

  1. Fresh long beans
  2. Fresh red pepper
  3. Brown rice
  4. A sample cup of  Orange Chile Sauce from Tastefully Simple

Here is the resulting recipe.

LONG BEAN STIR FRY WITH ORANGE CHILE SAUCE
Ingredients

  • olive oil
  • 1 pound fresh long beans, ends trimmed and cut into thirds
  • 1 red pepper, seeded and cut julienne
  • 1 small yellow onion, cut into slices
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon fresh garlic, minced
  • brown rice, cooked according to package directions
  • 1/4-1/2 cup Orange Chile Sauce from Tastefully Simple

Directions
Add olive oil to a large frying pan or wok. Add beans and saute until they just begin to soften. Stir in pepper, onion, pepper flakes and garlic. Saute over medium high heat until crisp tender. Stir in Orange Chile Sauce to taste and stir until heated through. Serve over brown rice.

Chef's Tips

  1. If you do not have long beans, fresh green beans work well, too.
  2. If you would like a slightly sweeter sauce, stir in a little bit of brown sugar or honey.
  3. These dish would also be great made with chicken or beef. Be sure to cook your meat thoroughly and stir it in at the same time you add the sauce.
